OK...I know I've been cranking out appetizers, but I love appetizers. I love just making a couple different appetizers for dinner some nights. And these are Awesome! I mean you really can't stop popping these in your mouth! They really do taste like little mini pizzas...and they are really quite easy to whip up. Trust me you really need to make these...Tonight!
And yes we really are baking from scratch...No mixes or crescent rolls involved today! But they are really simple...even the kids could help making these.
Pepperoni Pizza Puffs
adapted from Everyday with Rachel Ray April 2010
3/4 cup flour
3/4 tsp baking powder
3/4 cup whole milk
1 egg, lightly beaten
4 oz mozzarella cheese, shredded (about 1 cup)
4 oz pepperoni stick, cut into small cubes (about 1 cup)
Preheat the oven to 350 degrees. Grease a 24-cup mini muffin pan. In a large bowl, whisk together the flour and baking powder; whisk in the milk and egg. Stir in the mozzarella and pepperoni; let stand for 10 minutes. Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes. Serve with warm pizza sauce for dipping.
I made a similar recipe off Pinterest and they were yummy. BTW, we have made your pizza crescent rolls like three times in the past two weeks ...(using up the pepperoni but the hubs loves them!

ReplyDeleteI've made these twice...today :) I made them for the kids lunch and they requested them again for snack. Super easy and perfect for a quick lunch/snack. For snack I added 1/4 teaspoon of the pizza sauce to the top before baking them. Thanks for great recipe!

DeleteI don't think you can have too many appetizer recipes!! We love them too - heck, we've gone out to restaurants with the intent of just ordering a couple different apps and having a few drinks. You get to sample a few different things and I never walk away so full I'm in pain!! lol
