Red Grape and Goat Cheese Focaccia


Everybody needs a grapetime...you can find it bottle...
you can find it in a glass...or in Texas! (inside joke)

The other night I picked up a couple balls of pizza dough...one became a pizza...and one became this foccacia.  I love the sweetness of the grapes paired with the savoriness of the garlic and tanginess of the goat cheese...Just delicious!


And since the holiday entertaining season is in full swing right now this is something simple to throw together and it is sure to impress.

Red Grape and Goat Cheese Focaccia

1 lb pizza dough
2 tbs olive oil
1 garlic clove, minced
1 tbs chopped fresh rosemary
1 cup red grapes, cut in half
4 oz goat cheese, crumbled
coarse salt
Preheat the oven to 400 degrees.  Stretch out the pizza onto a large greased baking sheet.  With a pastry brush, brush the top of the dough with olive oil.  Lightly sprinkle coarse salt over the dough.  Scatter the garlic and rosemary over top.  Then lightly press the grapes into the dough.  Then scatter the goat cheese over the top.  Bake for about 25 minutes, or until golden brown.

  3. I love focaccia and this sounds delicious with grapes and cheese. I haven't quite developed a liking for goat cheese though but I'm trying.
