Chocolate Andes Mint Cookies


Lately I've become obsessed with cake mix cookies...They are just so easy and I love their chewy texture...and I bought about ten boxes of cake mix that were on sale.  If you like chocolate and mint, you will love these cookies.


Only 4 ingredients...easy enough!


The hardest part...unwrapping the candies. 
Try not to eat any (or buy 2 packs), we are using the whole pack.


 Mix the dough...Flatten a small piece in your hand
and fully cover the mint with the dough.


Bake...Cool on wire racks...and ENJOY!

Chocolate Andes Mint Cookies

1- 18.25 oz box Devil's Food cake mix
2 eggs
1/3 cup vegetable oil
1- 4.67 oz package Andes Mints (28 pieces), unwrapped

Preheat the oven to 350 degrees.  Mix together the cake mix, eggs, and vegetable oil.  Scoop out just enough dough to cover the mint, about a tablespoon.  Slightly flatten the dough in your hand and wrap a Andes Mint in the center, make sure the mint is covered entirely.  Place onto a baking sheet and bake for 8 to 10 minutes.  Place on wire racks to cool.  Makes 28 cookies.

Note: Did you know not all cake mixes are the same size?  For this recipe you need a 18.25 oz mix.


These cookies are wonderful made with Rolos too...Chocolate Caramel Rolo Cookies.

  2. The Andes mints remind me of my favorite Italian restaurant long time ago, they always served them at the end. Sneaking them inside of cookies sounds like a good idea.

  3. I love chocolate and mint and would definitely try these. To be honest, I've never tried cake mix cookies! :P I simply don't know what I've been missing...and when you say "chewy", I'm sold. :) I'm going to get a few boxes of cake mix tomorrow!

  5. Oh, gosh, those are so simple and looks so good..I should probably not make them, I have a feeling I would eat them all. Chris would come home and find me in a chocolate/sugar coma!! lol

  6. I made these on Christmas and they were easy and yummy!

    I was doubtful at first that measurements were correct but after mixing and mixing and mixing the batter came together. I did dump the batter onto wax-paper and then rolled it into a log which I sliced - easier portion control for me. I'll be posting pics and exp later this week.

    Next up are those doggie treats!
