I really wanted the first recipe I shared in the new year to be more wowing than a bran muffin. I know they may not seem like very much, but this is one of my all time favorite recipes. This recipe comes from one of my favorite restaurants in Tuscaloosa, The Cypress Inn.
The reason I like this recipe so much...well besides that the muffins taste good...is that the batter will keep for a month refrigerated. So hot muffins can always be ready in about 15 minutes.
These muffins are perfect for breakfast, but the spices in them make them go well with savory dishes too. The Cypress Inn serves them with every meal.
15 oz box raisin bran cereal (7 & 1/2 cups)
3 cups sugar
5 cups all purpose flour
5 tsp baking soda
2 tsp salt
4 eggs
1 cup vegetable oil
1 quart buttermilk
2 tsp vanilla extract
1 tsp cinnamon
1 tsp ground cloves
1 tsp ground nutmeg
In a large bowl combine all the ingredients and stir until well mixed. Cover and let sit in the refrigerator for 36 hours. When ready to bake preheat the oven to 400 degrees. Scoop the batter into a greased mini muffin pan and bake for 15 to 17 minutes. Serve immediately. These taste best while they are still warm.
The batter will keep refrigerated for 1 month. This recipe with make several dozen muffins.
These little muffins were part of our New Year's Day Dinner, alongside Grilled Chicken with Cypress Inn White BBQ Sauce and Hoppin John.

Ok, u really stumped me.. Never heard of a batter that will keep that long! and never heard of white bbq sauce either...looked at the ingred. and it looks good. I love mayo!.

Btw, corn flour & green beans flour is a different thing but the function is more or less the same. Green beans flour contained of more starch then corn flour.
