Pumpkin Waffles


Growing up we never ate pumpkin at our house.  Come to think of it I don't think I knew anyone who did.  Pumpkins are just not very popular for eating in the South.  We are sweet potato people.  Here pumpkins are mostly used for  fall decorations, mainly jack-o-lanterns.  It has only been in the last few years that you can even find pie pumpkins in the supermarkets here.  I was probably twenty years old when I first tasted pumpkin.  So for years I missed out on pumpkin bread, pumpkin pie, and pumpkin waffles.


Pumpkin Waffles

2 & 1/2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 & 1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground nutmeg
4 eggs
2 cups buttermilk
1 cup canned pumpkin
1/2 cup brown sugar
1/3 cup vegetable oil
1 tsp vanilla extract
 
In a bowl whisk together the flour, baking powder, baking soda, and spices.  Then in another mixing bowl add the eggs and whisk until well blended.  Then whisk in the buttermilk, pumpkin, brown sugar, oil, and vanilla extract.  Then add the dry ingredients and whisk until just smooth.

Cook in your waffle iron according to the manufacturer's instructions.  Transfer the cooked waffles to a 250 degree oven to keep warm and crisp.  This recipe makes 12 waffles in a 4 inch Belgium waffle iron.

Serve with warm maple syrup.



ps...I found six cans of pumpkin hiding in the back of the pantry.  So there will be more pumpkin recipes.

    Nope no pumpkin...Only sweet potato pie and pecan pie...Pumpkins don't grow well here its too hot, but sweet potatoes do. I guess that has something to do with it.

  4. I grew up eating pumpkins and sweet potatoes. So I really love both. I think I'm more on sweet potatoes as you can see lots of sweet potato recipes on my blog. But I love your pumpkin waffles. Love the colour and it looks every delicious. Looking forward to more pumpkin recipes from you.

  7. Thanks Bo! You may have just came up with a solution to my 'whole grain waffles taste blah' problem- adding pumpkin and spice to lift them up to a 'Yum' stage...Love this! Love waffles...

  9. Perfect, they look great and bet they are delicious. Reminds me of years ago when a friend made pumpkin pie and called me over to see what was wrong with it. She had scooped out the strings and seeds and baked pie that way and threw the pulp in the garbage. She's never lived that down! Canned pumpkin is the way to go!

  11. I never knew that about pumpkins in the south but I should have realized with the prevalence of sweet potato pie rather than pumpkin pie during the holidays.

    Pumpkin waffles sound amazingly good. What a great pairing for maple syrup!

    Pumpkin is also not something we use in Germany and I just started using it since living in the US. Great waffle recipe.

  16. These look amazing. (I have to get a waffle iron). I like them better than pancakes. My daughter has been wanting to make pumpkin bread...maybe today. If I had a waffle iron I couold easily talk her into these instead.

  20. My husband and son love anything that has pumpkin in it. They look forward to this time of year when Starbucks has their pumpkin drinks and Safeway has their pumpkin muffins for sale.   37. I need your waffle maker. Mine is awful. It doesn't like to make them crisp on the outside. They come out more pancake-ish. I'm glad you get to enjoy pumpkin now. It's so scrumptious!

  38. These look delicious and I've just purchased a new waffle iron!! I, too, grew up in the south and sweet potatoes were our "pumpkin". The only pumpkin I remember is pie at Thanksgiving--along with mincemeat (which I only recently have come to like (not love).

    I'm off to the south this week--for a week in my hometown in Virginia. I'm foreseeing lots of sweet potatoes and country ham biscuits-yum!

  45. I don't like pumpkin too, or at-least until 2 yrs ago. Pumpkins, gourds are not my thing unless they come in the form of Halwa. But these days, I am warming up to them.
    These waffles look exotic with an unusual flavor twist! Loving it!
