Alabama Cookies


I'm seldom in the mood to make cookies, but last night I couldn't sleep.  So it was the perfect time to make cookies.  I jotted down this recipe a long time ago from one of my mom's old cookbooks.  They seemed to have just an odd mix of ingredients and of course a name that just makes you think there is some great story about them.  This was my first time making or eating an Alabama Cookie and I have lived in Alabama all my life.  So I have no idea why they are called Alabama cookies.  If you know, tell me.


Alabama Cookies

1 cup shortening
1 cup sugar
1 cup brown sugar, packed
2 eggs
1 tsp vanilla extract
1 & 1/2 cups flour
1 tsp salt
2 cups old fashion oatmeal
2 cups chopped pecans
1 cup Rice Krispies cereal
1 cup sweetened flaked coconut

Preheat the oven to 325 degrees.  In the bowl of a mixer cream the shortening.  Then add the eggs, both sugars, and the vanilla extract.  Mix until well combined.  Then add the flour and salt.  Mix just until the flour is incorporated.  Then stir in the remainder of the ingredients.  Then drop onto a cookie sheet by the heaping teaspoonful.  Bake for 10 to 12 minutes.  Remove the cookies from the cookie sheet and allow them to cool on wire racks.  This recipe makes about 6 dozen cookies.


These cookies have the texture of a real crispy coconut macaroon.  We really liked them.  They are a nice change from the normal chocolate chip.

    yeah It really is too hot for baking, but I made them in the middle of the night so it wasn't that hot.

  16. If you didn't know, there is no chance that I could know. Never heard of them or tasted them before..And never knew that one could make cookies with rice krispies either..But they are looking real good.I would love this with a glass of cold milk.

    These cookies look wonderful. I'm trying to imagine the texture with all shortening. Can you describe it?
    I bet adding 1/2 cup butter and 1/2 cup shortening plus chocolate chips would make for an awesome chocolate chip with the works cookie, too. I love that this cookie is fab on its own but also seems so versatile.

    I did use butter flavor shortening. The texture is very light and crispy crunchy, since there are more goodies than dough...The shortening helped them keep there shape...They really didn't spread...When searching about the name...I found them on another blog cookie madness...I don't remember the add...but google it...they used half butter...there cookies were spread out like a normal cookie...So either way would work fine...If you add chocolate chips I would cut some of the sugar...as they were very sweet...I think they might be good with a little peanut butter too.

    My 2 yr old son and I made these yesterday and they were delicious! I opted to make mine bigger as I'm not a fan of crispy cookies, so they were soft and delightfully chewy. Thank so much for the recipe, everyone loved them-I think I will be making these a lot now!
