Pineapple Sherberita


My favorite drink is a margarita.  I love the classic lime, but I am also a huge fan of other fruit flavored margaritas.  In the summertime frozen margaritas are a must.  This one is so refreshing.  It's made with fresh pineapple and pineapple sherbet.  This recipe can be made with any kind of fruit or sherbet. 


Pineapple Sherberita

3 oz silver tequila
3 oz orange liqueur
4 scoops pineapple sherbet
1 cup fresh pineapple chunks
2 tbs lime juice
2 cups ice cubes
pineapple, cut into wedges for garnish

In a blender combine all the ingredients and blend until smooth.  Then pour into glasses and garnish with a wedge of fresh cut pineapple.  This recipe makes two drinks.

A couple other good summertime cocktails are my Raspberry Sorbet-tini or a Mango Sherberita.

  1. Yay! First to comment! Margarita is one of my favorite kind of drink, next to Boracay. I just love drinking them in oversized margarita glasses. The pineapple sounds refreshing and tropicana feel. I love it with some coconuts..

  5. Tequila goes straight to my head with its high alcohol content..Still this looks very summery and refreshing..probably cause you gave a tropical twist with the addition of pineapple chunks and sherbet..Maybe I will have one swig or two.. Happy weekend!

  11. Bo, I love every ingredient in this so I know this would quickly become one of my favorites.. Pineapple sherbert was my all time favorite as a child and I, like you, think margaritas are fabulous. But I have a feeling it will sneak up on you with the orange liqueur in it.

  17. Brilliant brilliant idea! I grew up loving sherbet more than regular ice cream- kind of like 'Scream scream for sherbet cream'! Okay that was cheesy...and I guess I never read the containers, because my sister and I say 'sherbert' LOL

    Sherbet is just ice cream...I don't even know the difference...so you could just sub ice cream...vanilla would be fine if you couldn't find pineapple.

    You might sub pineapple juice for the alcohol and double the lime to cut the sweetness.
