Mango Fried Rice


During the week there are so many things to do and there is so little time to cook.  So tonight I whipped up this quick fried rice and an avocado shake for dinner.  Fried rice is the perfect meal when you are pressed for time.  It only takes about 10 minutes to cook and is  great for using up leftovers.  I just happened to have some leftover ham in the fridge, but you could use shrimp, chicken, or even tofu.  Fried rice needs to be made with day old  cooked rice, but if you don't have any leftover rice you can put fresh cooked rice in the a uncovered bowl in the fridge for a few hours.  I planned ahead and cooked my rice last night.


Mango Fried Rice

2 tbs peanut oil
1 large shallot, thinly sliced
3 garlic cloves, chopped
1 tbs chopped fresh ginger
2 hot green chilies, sliced into thin rounds
1 egg, lightly beaten
1/4 cup chicken stock
3 tbs fish sauce
2 tbs soy sauce
1 tbs curry powder
1 tsp sugar
2 cups cooked ham, diced
4 cups cooked rice, cold and day old
1 ripe mango, chopped
3 green onions, thinly sliced
1/4 cup chopped cilantro

In a wok over a high flame add the peanut oil.  Then add the shallot, garlic, green chillies, and ginger.  Fry until fragrant, about a minute or two.  Then add the egg and fry for about a minute.  Then add the chicken stock, fish sauce, soy sauce, curry powder, and the sugar.  Cook for about a minute.  Then add the rice and the ham.  Break up any large chunks of rice and fry for about 5 minutes.  Then add the mango and fry for 1 minute.  Remove from the heat.  Stir in the green onions and cilantro.

So about 10 minutes for the rice and 5 minutes for the shake.  Pretty quick meal...huh?  And only one pan and a blender to wash.

    Fried rice is our family fav..actually I'm rice lover..although whenever I have it in the day time it's make me sleepy..lol..like the addition of Mango..Have you tried Indian(Alphanso)mango? if you can find near you, try it..you won't regreat it..

  9. I absolutely love rice. I always seem to have plenty leftover for fried rice during the week too. It is also a great way to use up leftover meat and vegetables. I am really intrigued by the use of mango in your fried rice-very cool. Even more intrigued by the avocado shake-okay!

  10. This looks awesome, I LOVE fried rice. The mango sounds great in it too. I haven't made fried rice very often and when I have, I've kinda just made up a recipe. I didn't know it was best to use day old rice, thanks for the tip, it makes sense.

    Many folks know something but you don't -- I am a Mangooo maniac. I love anything made out of mango. I say I love love love the Fried Rice? Adding ham was a splendid idea!
    Jag is right about one thing..Aplhonso Mango is awesome when consumed ripe. Check any Indian store if they have some imported from India..
    A snippet from an article from NYTimes - The flesh is knockout sweet, sorbet-smooth and very wet. Surprisingly deep pools of quivering mango juice collect in the teeth marks.

  14. I love your tip about putting the fresh rice in the refrigerator. That's a new tip for me! I also love the addition of mango to the fried rice. I usually put pineapple in my rice, but next time I make fried rice I am using your recipe.

I have a Mt.Everest size crush on that guy(Ram Charan Teja) after seeing that movie, that it isn't healthy for a married woman to have. You will love it,do no miss it. And make sure you see all the songs..that guy can certainly dance.And a story about a love that transcends 4 centuries is irresistible too.

  21. Not a fan of rice but I do fry them for the kids whenever there are leftovers. The boys love fried rice. Never tried with mangoes before though. Must be nice with the added sweet and sour taste of mango.

  28. We love fried rice and always seem to have leftover rice, so it's perfect for using up leftovers. I'm not a big ham eater, but I just made some spam fried rice...good memories of my days when I lived in Hawaii. I've been getting champagne mangoes lately, they've been so good lately they haven't made it into any dish. We just eat them for breakfast!

  40. You use fish sauce too ??? I'm rather surprised because I thought fish sauce are only commonly use in Asian countries like Vietnam , Thailand and of course Singapore. Many were put off by the strong pungent. You have a really interesting blog and I love those photos , very captivating !
