Oatmeal Cranberry White Chocolate Chip Cookie Bars
1 cup butter, room temperature
3/4 cup light brown sugar, packed
1/2 cup granulated sugar
1 egg
1 tsp vanilla extract
1 & 1/2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
3 cups old fashioned rolled oats
1 cup white chocolate chips
1 cup dried cranberries
In a mixer cream together the butter, both sugars, egg, and the vanilla extract.
Then add the flour, salt, and baking soda. Mix until just combined. Add the oats and mix until the oats are incorporated.
Then add the white chocolate chips and dried cranberries. Mix until just combined.
Press the cookie dough into a greased 11x13 inch pan. Bake in a 350 degree oven for 30-35 minutes. The cookies should be golden brown and the center should be set. Allow to cool in the pan and cut into 24 bars.
This is real simple recipe. I hope you will like them as much as my dad did.

Thanks! I've just been on a white chocolate kick lately. I bought one of those big Lindt white chocolate coconut bars and have been breaking me off a little taste everyday...Its so good...so I figured I use white chocolate chips...but regular chocolate chips would be great...especially if you used dried cherries instead of cranberries. Cherries and chocolate go great together.
