This is a classic southern dish. If you are from the South you have probably eaten this dish more times than you can count. It is especially popular during the summer when everyones garden is overflowing with okra and tomatoes. This sucess of this depends on the quality of ingredients you use. So if tomatoes are not in season it is much better to use canned tomatoes than fresh ones. Since it is the middle of winter here obviously I am using canned tomatoes.
Stewed Okra and Tomatoes
5 strips of bacon, diced
1 onion, diced
35 oz can whole tomatoes, chopped
1 tbs chicken base
2 cups okra, chopped into 1/2 inch pieces
salt & pepper
In a dutch oven over a medium flame add the bacon and cook until it is crisp. Then add the onion and cook until the onion starts to turn translucent. Then add the canned tomatoes and the chicken base. Season with 1 tsp of salt and a little black pepper. Let this simmer for about 30 minutes.

Wow! I have lived in the South for decades and only know deep-fried okra! Maybe it is just Texas! Anyhow, love your version; this is closer to the way we fix it except minus the bacon!

Its a vegetable...you eat the seed pod...It only grows in a hot humid climate...you might not be able to get it there.

This is one traditional southern dish I just cannot get into. I love me some fried okra though. I will confess I have only had it this way once and I just thought the okra was slimy and I hated that texture. Maybe it was just the way they cooked it but It was enough to make me not want to try it again.

I have never had a okra stew before. But that bowl of stew looks lick-worthy! Okra is common in Indian cooking and I have tried many curries and fries with it what with it being a brain food and all. The only thing that I don't like about the okra is its sticky sap.
I will give this a try, I like cooking with okra although I did not discover it until I moved to the SW US.

Okra is one of my favorites.
Growing-up in South Florida. we tended to use zucchini stewed with tomatoes rather than okra. Okra would be discovered after I moved to North Florida ( which is much more south, than south Florida). I have yet to prepare okra. It is one of those late summer vegetables that need to be prepared right and I have not risen to the challenge as yet.

I'm just amazed at all the wonderful things you cook! I've never had okra and tomatoes before, but it sounds like something I'd like to try. My 80 year old neighbor fries her home-grown okra in a cornmeal batter in the summer. That's my only experience with okra. I must say, I didn't care for it much, but that's what I thought of brussel sprouts until I learned about roasting them. I love trying new foods so I'll plan on trying this when the tomatoes start growing in the garden! Thanks for sharing!
How do you keep the colors so vibrant? My okra and tomatoes always end up looking dark.

You might be cooking yours too long and if you use a black cast iron pot...that might be the problem...try this recipe...see if you have better luck.
