Raspberry Infused Vodka


Back in my bar hopping days one of my favorite bars was Catch 22 in downtown Tuscaloosa.  They make their own infused vodkas.  The wall behind the bar was covered in large jars filled with vodka that had been infused with anything from sweet fruits to olives.  The drinks tasted great, but the method for infusing vodka is so simple you can easily do it at home.  This weekend I had a little free time and I figured I could get a jump start on spring cocktails and make a batch of raspberry vodka.

Raspberry Infused Vodka

You need:
1 750 ml bottle of vodka
2 pints of fresh raspberries
1 large glass jar

The method is so simple all you do is put the raspberries in the jar and pour the vodka over them.  Then seal the jar and place in a cool dark place for two weeks.  Then strain the the vodka through a coffee filter and discard the berries. 

Here are a few tips I have learned after doing this a few times:
  • You don't have to use the most expensive vodka, but you don't want to use a low quality one.
  • Be sure the jar you use seals very tightly.
  • If the berries start to turn mushy remove them.
  • The berries might turn gray...This is normal.
In two weeks when the vodka is ready I will share with you some great cocktails.  Hopefully it will be warm enough for us to have our cocktails out on the deck.

  3. Bo, are the raspberries sweet enough on their own? I am doing that now with vanilla beans (left over from making vanilla extract) and coffee beans. I was just wondering how would you sweeten it? Just simple syrup?

  7. This sounds wonderful! Bo, I love all the wonderful recipes that you have! It's like you're peeking at my imaginary list of favorite foods and drinks! I tried peach infused vodka last summer - I used peach flavored vodka, which was not the wisest choice - I mean it's kind of a moot point that peach vodka infused with peaches would still taste like um...peach vodka?! When the raspberries are ripe in our area I'll be trying this one out! And, yes, Grey Goose is a staple in my freezer!

  13. can you use very old vodka? lol....5 years ago when i was in my tweens lol....i bought a small bottle of vodka...and sipped it and had a major headache. i cant drink coz i get headachesss and get so dizzy loll.

    The raspberries are sweet enough on their own. I don't add any sugar. I think the coffee will need some sweetener or it will be very bitter. I have never infused any with coffee, but I would try simple syrup.

    It is made the same way you would make vanilla extract, but I have never tried cooking with it. I'm sure it would be great added to macerated berries or to frozen desserts. But, I'm not sure if the flavor of the berries would survive being heated.

    But, Bo... you were right to use Grey Goose to infuse. You shouldn't mix a damn thing with Belvedere!

    I hate to throw the berries away, especially since they were organic and were about $6 a pint. But, after two weeks in the vodka they have lost all their color and look grey. So I'm really afraid to use them. I doubt anything made with them would taste good since all their flavor is in the vodka.
