Mixed Baby Greens with Goat Cheese, Bacon, and Fig Balsamic Vinaigrette

This salad has two of my favorite ingredients bacon and goat cheese.  It is a simple salad, but the flavors are so delicious.

Mixed Baby Greens with Goat Cheese, Bacon, and Fig Balsamic Vinaigrette

4 cups baby greens
4 oz goat cheese, crumbled
4 slices of bacon, cooked crisp and crumbled
1 tbs fig preserves
1/4 cup balsamic vinegar
1/2 cup olive oil
kosher salt
black pepper

In a small bowl whisk together the fig preserves, balsamic vinegar, olive oil, 1 tsp kosher salt, and a little freshly cracked black pepper.  In a serving bowl toss the greens with the vinaigrette.  Then top with the goat cheese and the crumbled bacon.

  2. love it- We use goat cheese a LOT in salads- I like to keep it in the freezer- stays longer and way easier to crumble.

  4. Michael,
Yeah I love salads too...especially now that the weather is warming up.

    Lady Ren,
Thanks for the tip about storing it in the freezer. I actually had some that froze in the bottom of the fridge and I just tossed it cause I figured it wasn't good anymore.

  15. Great salad! And the only thing better than goat cheese with salad greens is bacon. I would never imagine including fig preserves but it sounds really good and I will give it a try! Thanks!

  19. What a wonderful salad to go with the roasted potatoes, great flavor profile combination. Just the potatoes and salad would be a perfect dinner for me, however I'm sure Michael would have to have the pork too :D ...
