I never really liked asparugus until I tried it roasted. When roasted it is almost as addictive as french fries. When no one is looking I even pick up the spears with my hands and eat it just like you would a french fry. It is really simple to prepare. So simple that I debated whether or not to share this recipe. But, sometimes the most simple dishes really are the best.
2 buches of fresh asparagus, tough ends removed
1 red onion, peeled and cut into 6 wedges
3 tbs olive oil
salt and pepper
Preheat the oven to 450 degrees. On a baking sheet toss the asparagus and red onion with olive oil. Season well with salt and pepper. Then roast in the oven for about 30 minutes. Flip halfway through cooking.
I served this with this with the Waygu Beef Tenderloin Steak.

Asparagus is amazing. Too bad it makes your pee stink if you eat too much of it.
Have you ever put roasted asparagus (maybe like 3 stalksish) on top of eggs benedict (made with pork tenderloin medallions instead of ham/Canadian bacon)? Trust me, it's just another delightful way of having asparagus. And it's also a way to jazz up eggs benedict. Makes people think they're having a fancy brekkie! :P

Love asparagus, and remember when we were so dirt poor in Texas, now and then my mom would buy the canned kind, I would risk death and open it up when no one was looking and eat them...they were soooo expensive back then, glad we get fresh ones now!

Bo, btw, that is the only way to eat asparagus! lol...two of my faves- asparagus and red onion..here's another hint: u can sprinkle one a vinagrette instead of olive oil ... it adds more flavor...

I've heard that about asparagus, but my pee has never smelled funny...Has yours? I never make eggs benedict...I usually just throw asparagus on top of scrambled eggs, but your was sounds great...I will try it sometime...maybe for dinner...I don't have enough time in the morning for a lot of cooking.

Oh asparagus is not an easy thng to cook, in my opinion! I seem to have a love hate relationship with it, as to me, it either tastes real good or real nasty lol I'm sure yours was divine!!

Yeah, asparagus totally does it. And yes, I've made my pee smell, haha. I ate like maybe 5 stalks with some onion dip and like 45 minutes later, I could smell a sweet/bitter smell, lol. It's really weird. We learned in my genetics class that everyone's pee smells after asparagus, but only 1/4 of people have the genes required to actually smell it. Make sense? It's weird, but so real! :P
I make EB for brekkie sometimes, but I normally have it for brunch on like a Sat or Sun. Lemme know how you like it if you decide to try it!

Last summer I attended a grilling class and they were grilling asparagus, but not to eat by itself...for a salad. They marinated it in olive oil and balsamic vinegar and then grilled it. The balsamic gave it a slight sweet taste.

I agree with Jovan about the smell- But it is very healthy for you. I also love eating it like a french fry, usually after BBQing it.
I made a fantastic Hollandaise Sauce last week which I posted on my Vday blog entry. I thought it was the best I've ever made cuz it had a distinct lemon taste but was not tart. Once you have a good hollandaise sauce whatever else you put with it is secondary.

I agree - grilled asparagus is fantastic! We make a lot of it in the summer on the barbecue - we lose pieces in the grate sometimes, so we have to be extra careful when turning so as not to lose even one spear! I'm going to try grilling in the oven - the red onion sounds like such a great complement to the asparagus! Thanks for sharing this simple idea!
