Chicken and Sugar Snap Pea Stir-fry with Chili Garlic Sauce


Today my Mom and Dad came to visit.  So I knew there wouldn't be much time for cooking, so for lunch I whipped up this quick and easy stir-fry.  It  is made with ingredients that you can find in any American supermarket and it can be made in less than twenty minutes!  It is actually very healthy too.  I was needing a break after all the cream and butter I have eaten this week.


Chicken and Sugar Snap Pea Stir-fry with Chili Garlic Sauce

2 chicken breast halves, thinly sliced
2 cups sugar snap peas
6-8 shitake mushrooms, sliced
1/2 cup mung bean sprouts
1 clove garlic, chopped
1 tbs cornstarch
4 tbs soy sauce
1 tbs chili garlic sauce
2 tsp toasted seame oil
1 tbs sugar
black pepper
peanut oil


Season the chicken with 2 tbs of soy sauce and a little black pepper.  Then toss with 1 tbs cornstarch.  In a wok over a high flame heat 2 tbs of peanut oil.  Then add the chicken and cook until opaque. 


Then add the vegetables and 2 tbs of soy sauce and cook for about 3-5 minutes, or until the sugar snap peas start to get tender.  Then add the  chili garlic sauce, sesame oil, and 1 tbs of sugar.  Continue to cook for 1 additional minute.  Serve over steamed rice.

  11. Sugar snap peas are my new favorite. I like to steam them and eat them with my fingers (like fries!). PS, I cannot find a separate email for you, so I will have to ask here: What type of All Clad skillet do you have? Yours looks deep and plenty big! Do you know the quart size and name? Thanks!

    I love anything I can eat with my fingers...Its actually a new purchase I've only had it for about a month...It's a 6qt Saute with lid...I love it. It is the only pan I have found that you can cook 4 chicken cutlets in at once. The only drawback is that it is heavy...mine is the one with the copper core and the price isn't that bad if you tell yourself its only $50 a month for a year.

  15. ^I am still clutching my gift certificate, waiting to buy my "back to work to me" gift. I, too, want a "big enough" pan...I bought the 5.6 Le Creuset only to find it really too small to stir soups so I went back for a 7.3. I hate to make that mistake again. I was looking at the 4 qt All Clad saute but I think I will go back now and look at the 6 qt. Thanks!!
